How to Make Aloo Bhuna Masala

Step 1: Prepare the Masala Paste

  • In a bowl, mix curd, turmeric, red chili powder, cumin powder, coriander powder, black pepper, and kasuri methi. Stir well and set aside.

Step 2: Sauté the Base

  • Heat oil in a kadhai (pan) and add cumin seeds. Let them splutter.
  • Add finely chopped onions and sauté until they turn translucent.
  • Stir in the ginger-garlic-green chili paste and cook for a minute until fragrant.

Step 3: Cook the Masala

  • Add the tomato purée and cook until the oil starts to separate.
  • Pour in the curd-masala paste and mix well. Cover and let it cook for a few minutes so the flavors blend together.

Step 4: Add Potatoes & Vegetables

  • Add hot water and salt as per taste.
  • Toss in the boiled potatoes, cover, and let them absorb the masala for 3-4 minutes.
  • Now, add sliced onions and capsicum, mix well, and adjust the consistency by adding a little more water if needed.
  • Cover and cook for another 2-3 minutes until everything is well combined.

Step 5: Garnish & Serve

  • Sprinkle fresh coriander leaves and add green chilies for an extra kick.
  • Serve hot with roti, paratha, or steamed rice.
